OUR THIRD DAY IN ECUADOR WAS ALL ABOUT SLOWING DOWN AND TAKING IT ALL IN. FROM A COZY BREAKFAST AND TIME EXPLORING ANCIENT RUINS TO ENDING THE DAY WITH A MOUNTAIN SUNSET, EVERY PART OF THE DAY FELT EASY, INTENTIONAL, AND UNFORGETTABLE.



A SLOW MORNING IN QUITO


We started the morning at Uko Bread Brunch & Coffee República with a coffee in hand. It was cozy, laid back, and exactly the vibe we were looking for.


We shared avocado toast on fresh sourdough, a fruit bowl with granola and honey, and of course an iced latte to start the day. Everything felt fresh and simple, the kind of breakfast that leaves you full but not heavy for a day of exploring.


Between the coffee, baked bread, and fresh fruit, it was the perfect place to ease into the day before heading out to explore.



EXPLORING DE LOS QUITUS


After breakfast, we headed just outside of Quito to explore De Los Quitus, an archaeological site tied to the ancient Quitu civilization. It felt like stepping into a completely different time, and such a cool contrast to the slow morning we had just enjoyed.


Walking through the ruins, it was easy to imagine what life once looked like here. From stone structures and ceremonial spaces to detailed carvings, everything told a story. Hearing our guide share pieces of daily life, traditions, and beliefs made the experience feel personal and meaningful, not just something we were passing through.





EXPLORING QUITO & LUNCH


After visiting De Los Quitus, we spent some time exploring Quito and taking in the city at a slower pace. Walking through the streets, we loved seeing the mix of historic architecture, local shops, and everyday life all around us.


For lunch, we stopped at Hasta La Vuelta Señor, one of the best spots in Quito to experience traditional Ecuadorian food. The setting felt welcoming and relaxed, and the meal was exactly what we needed after a full morning of exploring. It easily ended up being one of our favorite stops of the day.


Taking time to wander the city and enjoy a great lunch helped the day feel balanced and unhurried, and it was the perfect transition before heading into the mountains for sunset.





WATCHING THE SUNSET FROM THE MOUNTAIN


To end the day, we made our way into the mountains for sunset and found a quiet viewpoint overlooking Quito. As the sun started to set, the sky softened into shades of pink and orange, and the city lights slowly came on below. It was peaceful, beautiful, and the perfect way to wrap up the day. Standing there, we felt a deep appreciation for Ecuador and the experiences the day had brought us.





REFLECTING ON DAY THREE


Day three was a beautiful blend of culture, history, and natural beauty. From sharing a traditional meal to walking through ancient ruins and watching the sun set over the mountains, each experience left a lasting impression.
